Ok, this one is good, really good and I made it even better by converting it to be made in the crock pot!
Changes or substitutions I made to recipe
Not dark beer. I didn’t have any dark on hand and just used a regular old Bud Light. I am sure that the dark beer would have given a deeper flavor
The recipe calls for a pound of onions, I didn’t even come close
Beef Broth—I just used water, it was only a 1/2 cup and I didn’t want to take the time to thaw some broth. Note to self…take the time to pressure can more broth, frozen only works for preparedness
I browned the chicken thighs and then put them into the crock, just throwing the rest of the ingredients on top. Set it for low and came back 10 hours later to amazingness. While I know that the flavors would have been even better this was still really really good and I love anything I can easily put into the crock pot before leaving for work. Served over oven baked rice which was great.
